Creamy Cajun Chicken Pasta

A delicious and comforting chicken pasta dish that is high in protein and secretly healthy. Shhh. Don’t tell too many people about this one, its best kept a secret.

Preheat oven to 180°C/ 355°F. Coat chicken breast in olive oil and cajun seasoning and bake for 25-30 mins. Baste chicken breast during this time for best result.
Meanwhile, heat olive oil in pan and add onion and sweet red pepper. Cook for 5 mins until soft. Add garlic and chilli, stir well and cook for 2-3 mins. Add chopped tomatoes to pan, fill used chopped tomatoes tin with water well a and add that to pan along with oregano and red wine vinegar. Bring pan to a simmer and cook for 5 mins.
Stir in smoked paprika and fresh basil and continue to simmer for 10-15 until sauce has reduced. Now is a good time to cook your pasta.
Once sauce is thick and pasta iscooked, add both to large saucepan along with cream cheese, a little more cajun seasoning (to taste) and lots of pasta water. Stir well on low heat until sauce begins to emulsify.
Slice cooked chicken breasts thinly and serve on top of pasta when serving. Garnish with grated parmesan and fresh basil.

For The Cajun Chicken Breast

  • 3 chicken breast.
  • Tsp extra virgin olive oil.
  • Tbsp cajun seasoning (we use Shwaarz).

For The Pasta:

  • 300g uncooked pasta (any pasta is fine).
  • Pasta water - make sure you save lost when draining pasta!.
  • Tbsp extra virgin olive oil.
  • 1 onion - finely chopped.
  • 1 sweet red pepper - finely chopped.
  • 3 cloves of garlic - crushed.
  • 1 red chilli - deseeded and finely chopped.
  • Tin of chopped tomatoes.
  • Tbsp oregano.
  • Tbsp red wine vinegar.
  • 1/2 tsp smoked paprika.
  • Bunch of fresh basil - chopped.
  • 3 tbsp light cream cheese.
  • Cajun seasoning, to taste.

To Garnish

  • Grated parmesan.
  • Chopped basil.
