Tuscan Chicken Gnocchi soup
Tuscan Chicken Gnocchi Soup is like having a delicious, warm hug serve in a bowl. Herby chicken breast, seared, shredded and added to a rich and creamy tomato soup with sun-dried tomatoes and moreishly chewy balls Gnocchi. Heaven!

Season the chicken breast all over with the smoke paprika, Italian herb seasoning, garlic granules, salt and pepper.
Heat the oil in a large, deep pan, sear the chicken breast over a medium heat for 4-5 minutes on each side, until showing colour, then remove from the pan.
In the same pan, sauté the shallot, celery for 3 minutes, until soft, add in the sun-dried tomatoes, cook for 2 minutes, add the tomato puree, cook for 1-2 minutes, stirring constantly, until thick, then add the chicken stock, cream and bring to a gentle simmer.
Shred the cooked chicken using two forks and add to the soup. Stir in the parmesan, spinach and gnocchi, simmer gently got 5-10 minute until ready to serve.

- 2 chicken breast.
- 1/2 tbsp of smoked paprika.

- 2 ribs of celery - finely chopped.
- 3 cloves of garlic - finely chopped.
- 100g of sun-dried tomatoes - chopped.
- 2 tbsp of tomato puree.
- 1 litre of chicken stock.
- 150ml of double cream,
- 2 big handfuls of baby spinach.
- 500g of gnocchi.
- 20g of parmesan - grated.
