Vegan Cookie Brownie Bars

A 100% vegan, decadent but secretly healthy sweet treat. Super easy to make and using whole foods only, these are the perfect plant-based sweet treat. Not to mention, they look amazing!

To make cookie dough, mix together almond flour, peanut butter, coconut oil, maple syrup, vanilla essence and salt until fully combined. Fold in your choc chips and transfer mixture to a lined 8”x8” baking tin.
Pat mixture down until completely flat and level and chill in fridge or freezer for 30 mins.
To make brownie ganache, add dates, walnuts, cocoa powder, vanilla, salt and a large splash of water to a blender or food processor and blitz until smooth. Pour mixture onto cookie dough mixture in baking tin and spread until even.
Chill in freezer or fridge for another 30 mins before slices into 16 bite-sized pieces. Garnish with desiccated coconut and enjoy

For The Cookie Dough

  • 200g almond flour.
  • 125g of peanut butter.
  • 2 tbsp coconut oil - melted.
  • 80g of maple syrup.
  • Tsp vanilla essence.
  • A pinch of salt.
  • A handful of vegan choc chips.

For The Brownie Ganache

  • 50g soft pitted Dates.
  • 125g of walnuts.
  • 2 tbsp of cocoa powder.
  • Tsp vanilla.
  • Large splash of water.

To Decorate

  • Desiccated coconut.
