Preheat oven to 180°C/ 350°F.
Place hazelnuts on a lined baking tray and bake for 10 mins. When baked, remove from oven and leave to cool for 2-3 mins. Then, using a tea towel, rub together hazelnuts to remove their skins.
Transfer hazelnuts to a food processor and blitz until hazelnuts resemble a nut butter. This could take up to 10 mins, the longer you blend, the smoother your nut butter will be and therefore the smoother your Nutella will be.
Add cocoa powder, coconut sugar, salt and chocolate protein to food processor and blend again until completely combined. You should be left with a delicious high protein Nutella. Store in an airtight container, in a cool dark place for up to one month.
