Our Sweet Chilli Beef Stir Fry is the perfect, low calorie meal prep option. It’s ready in 15 mins, the flavours match that of your favourite Chinese takeaway and it will keep you fuelled throughout the day.

500g of basmati rice (cooked), to serve.
In a medium bowl, mix together Sweet Chilli Sauce ingredients.
Heat groundnut oil in a large pan and add marinaded beef. Cook for 2-3 mins, then add garlic and ginger. Cook garlic and ginger for 2 mins before adding bell peppers and onion, cook for 2 mins, then add Sweet Chilli Sauce - bring sauce to a rapid simmer and cook until sauce thickens and coats beef. Add spring onions and then you are ready to box up into your meal prep boxes. Serve with 125g of cooked basmati rice and a side salad.

For the Sweet Chilli Sauce:

  • 3 tbsp of soy sauce.
  • 2 tbsp of ketchup.
  • 2 tbsp of hoisin sauce.
  • 2 tbsp of rice wine vinegar.

For the stir fry:

  • Tbsp of groundnut oil.
  • Tbsp of soy sauce.
  • 1/2 tbsp of baking powder.
  • 400g of frying steak.
  • 3 cloves of garlic - grated.
  • 3 cloves of garlic - grated.
  • 2 small bell peppers - chopped.
  • 1 onion - chopped.
  • 1 green chilli - deseeded and sliced in 1/2.
  • 3 spring onions - chopped into 1/4s.

To serve:

  • 500g of basmati rice (cooked), to serve.
