Honey Chicken

This is simply called Honey Chicken and it’s my new favourite fakeaway! Crispy chicken pieces tossed in sweet and sticky honey sauce. So simple and so tasty!

Preheat oven to 180°C/ 365°F.
Mix together the egg whites, white pepper and sesame oil in a large bowl, then mix in the chicken.
Blend the cornflakes to a fine crumb, then transfer to a separate large bowl, mix in the salt and smoked paprika, then coat the chicken pieces in the cornflakes and transfer to a lined baking tray. Lightly drizzle with olive oil and bake for 15-20 minutes, until golden and crispy.
Meanwhile, in a medium bowl, mix together the honey sauce ingredients, except for sesame oil and ginger. When the chicken is baked, heat the sesame oil in a non stick and pan and sauté the ginger on medium heat for 2 minutes, then add the chicken pieces and honey sauce. Cook until the sauce in bubbling and sticking to the chicken, then remove from heat.
Serve on white rice. Garnish with sesame seeds.

Ingredients

Serves 2

Marinade:

  • 2 egg whites.
  • 1/2 tsp of white pepper.
  • Tsp of sesame oil.
  • 300g chicken breast - cut into 3cm cubes.

Cornflakes:

  • 50g of cornflakes.
  • 1/2 tsp salt.
  • 1/2 tsp smoked paprika.
  • Tsp of extra virgin olive oil, for baking.

Honey sauce:

  • 3 tbsp runny honey.
  • 2 tbsp of water.
  • Tbsp rice wine vinegar.
  • Tsp of custard powder.
  • Tsp of sesame oil.
  • 15g of ginger - grated.

To serve:

  • 250g of cooked white rice.
  • Sesame seeds, to garnish.
