Delicious and creamy noodles in ten minutes. Fiery, flavourful and so easy to make, our Dan Dan Noodles could become a weeknight staple.  Feel free to add some shredded or sliced chicken, tofu or any other protein sources.

Grind Sichuan Peppercorns using a pestle and mortar, then transfer to a bowl and add garlic, chilli flakes and sesame seeds. Heat oil in a saucepan until very hot, then add hot oil to bowl peppercorns, garlic, chilli flakes and sesame seeds. Allow garlic to sizzle in the oil for 10-20 secs, then mix everything together until combined. Add soy sauce, mirin, peanut butter and honey to bowl and mix once more.
Boil a large saucepan of water and cook noodles according to packet instructions. During cook time, add 1-2 ladles of water from saucepan to Dan Dan sauce and mix sauce again. This will loosen the sauce and give you more quantity.
Once noodles are ready to serve, divide Dan Dan sauce between three bowls, then using a pair of tongs, add noodles directly from saucepan to bowls (dividing into three again), then mix Dan Dan sauce with noodles using a fork or a pair of chopsticks. Garnish with sesame seeds and spring onions.

For the Dan Dan Noodles:

  • 2-3 cloves of garlic - finely chopped.
  • Tsp of Sichuan peppercorns.
  • Tsp of chilli flakes.
  • Tbsp of sesame seeds.
  • Tbsp of neutral oil.
  • Tbsp of dark soy sauce.
  • Tbsp of light soy sauce.
  • 2 tbsp of Mirin.
  • Tbsp of peanut butter.
  • Tbsp of honey.
  • 200g of medium or fine noodles.
