Th best thing about these noodles, other than their ridiculously punchy sweet, citrus flavour, is the fact they are ready in 10-15 minutes. Making them the perfect, high protein, weeknight meal for two.

Bring a large saucepan of water to the boil and cook the egg noodles according to packet instructions.
Make the honey-lime sauce. Heat the groundnut oil in a saucepan until very hot, then in a large bowl, pour the oil over the garlic and shallot and allow it to sizzle for 60 seconds. Add the remaining honey-lime sauce ingredients and whisk until combined.
Heat a few sprays of low calorie cooking spray in a non-stick pan and cook the chicken mince, stirring regularly on medium heat, for 5 minutes, until no longer pink. Add the soy sauce, oyster sauce, onion granules and garlic, then cook until the sauce is soaked into the chicken mince and remove from heat.
Drain the noodles and add to the sauce, along with chicken mince, and mix until combined. Serve and garnish with spring onions.

  • Tbsp groundnut oil.
  • 1 shallot, finely chopped.
  • 2 cloves of garlic, finely chopped.
  • Juice and zest of 2 limes.
  • Tbsp dark soy sauce.
  • 2 tbsp runny honey
  • Tbsp oyster sauce.
  • 1/2 tbsp of red pepper paste.

  • 2 servings of egg noodles
  • 300g of chicken mince.
  • 1/2 tbsp dark soy sauce.
  • 1/2 tbsp oyster sauce.
  • 1/2 tbsp onion granules.
  • 1 clove of garlic, finely chopped.
  • 2 spring onions, cut on the diagonal, to garnish
