Sweet Chilli Noodles

Deliciously fresh Sweet Chilli Noodles. This is a recipe I have been making a lot recently. It's quick, easy, healthy and high protein, making it the perfect weeknight dinner option.

Mix together the sweet chilli sauce in a medium bowl.
In a separate bowl, coat the king prawns in the sesame oil, dark soy sauce and chilli powder.
Heat the groundnut oil in a large frying pan and sauté the garlic, on medium heat for 2 minutes, then add broccoli, carrots, peppers and ginger and stir fry, on high heat, for 3-4 mins. Add the king prawns and cook for 2 minutes, until pink all over, then mix in the noodles and sweet chilli sauce.
Garnish with spring onions, chopped nuts and sriracha mayonnaise.

Ingredients

Serves 4

Sweet chilli sauce:

  • 3 tbsp sweet chilli
  • Tbsp ketchup
  • 2 dark soy sauce
  • 2 tbsp rice wine vinegar
  • 1.5 tbsp runny honey.
  • 1/2 tbsp sesame oil
  • 1/2 tbsp sriracha
  • Tsp Chinese five spice.

  • 350g of raw king prawns, peeled and deveined
  • 1/2 tbsp sesame oil
  • 1/2 tbsp dark soy sauce
  • Tsp mild chilli powder
  • Tbsp groundnut oil
  • 150g of tenderstem broccoli - chopped
  • 2-3 carrots - thinly sliced
  • 2 bell pepper - chopped
  • 10-15g of ginger - thinly sliced
  • 4 servings of cooked egg noodles
