Mix together all marinade ingredients until combined. Then add chicken thighs to marinade, mix to coat chicken thighs and then set aside.
In a separate bowl, mix together all ingredients for the Zingy Chipotle Sauce, then set aside.
Heat a cast iron pan or non-stick skillet until hot, then add chicken thighs. Cook for 5 mins, stirring and flipping regularly, then add onion. Continue to cook for 5-10 mins, until chicken thighs are charred and onion begins to caramelise.
To build tacos, heat mini tortilla until pliable, then spread tsp of Zingy Chipotle Sauce across tortilla, add chicken thighs and onion, hot sauce, coriander, along with cheddar and mozzarella. If you want to fry tacos and melt your cheese, fold over tortilla to create a quesadilla, then fry in a pan until crispy and cheese is melted. If you don’t want to fry tacos, add lettuce and fold into a wrap, then enjoy!

For the Marinade:

  • Tbsp of extra virgin olive oil.
  • 3 cloves of garlic - finely chopped.
  • Tsp of cumin.
  • Tsp Smoked paprika.
  • 1/2 tsp of Coriander.
  • 1/2 tsp of chilli powder.
  • 1/4 tsp of cinnamon.
  • 2 tsp of Chipotle paste.
  • Tbsp of honey.
  • Juice of 1 Lime.

For the Zingy Chipotle Sauce:

  • 50g of Soured cream.
  • Tbsp of light mayonnaise.
  • Juice of 1/2 a lime.
  • 1/2 tsp of garlic granules.
  • Tsp of chipotle paste.
  • Fresh chopped coriander.
  • A few dashes of hot sauce or to taste.
  • Tsp honey.
  • 1/2 tsp of garlic smoked paprika

For the rest:

  • 500g Chicken thighs - thinly sliced.
  • 1 white onion - finely sliced.
  • 8 mini wraps.
  • 50g of cheddar - grated.
  • 50g of mozzarella - cut into thin slices.
  • Shredded lettuce - optional.
  • Hot sauce.
