BBQ-Harissa Chicken Sandwich w/ Chorizo and Manchego

This is so tasty and fresh and the perfect way to enjoy a high protein lunch on the go! A delicious and zingy Garlic- Harissa Mayo, complimented by juicy chicken breast, manchego cheese and chorizo slices.

In a large bowl, mix together all BBQ-Harissa Chicken Marinade ingredients. Cover and bash chicken breast until 1” thick, then add to marinade and stir to coat. If you have time, cover and leave to marinade, if not, straight over to the hob.
Heat a cast iron pan till very hot, then add chicken. Cook for approx 5 mins on each side, until cooked through, then remove from pan. If the chicken is cooking in the centre, you can always chuck it in the oven for 5-10 mins.
Mix together Garlic-Harissa Mayo ingredients.
Toast your ciabatta loaves, then spread Garlic-Harissa mayo onto ciabatta. Add chicken, Manchego, chorizo slices, tomato, cucumber and rocket, then put the lid on it.

For the BBQ-Harissa Chicken marinade:

  • Tbsp of extra virgin olive oil.
  • 2 tsp of harissa paste.
  • 2 tbsp of bbq sauce.
  • 1/2 tsp of cumin.
  • Juice of 1/2 a lime.
  • Salt and pepper, to taste.
  • 200g of chicken breast.

For the Garlic-Harissa Mayo

  • Tsp of harissa paste.
  • 3 tbsp of light mayonnaise.
  • Juice of 1/2 a lime.
  • 1/2 tsp of garlic granules.

For the Sandwich:

  • 2 large or 4 small ciabatta rolls.
  • 4 Chorizo slices, per sandwich.
  • 30g of manchego -grated or thinly sliced.
  • Tomato sliced.
  • Cucumber - thick slices.
  • Rocket.
