Airfryer Gnocchi in a Creamy Pesto Sauce

If you haven't tried air frying your gnocchi, then you definitely should - it creates wonderful texture. We've tossed ours with simplest but most delicious creamy pesto sauce. This will be ready in 15 mins, no problem.

In a large bowl, toss together gnocchi, olive oil, salt, pepper and dried basil, then airfry for 10-12 mins, turning once throughout cook time.
Add pesto and light cream cheese to a food processor and blitz until combined.
Heat a few sprays of low calorie cooking spray in a pan and cook sweet red pepper for 3-4 mins, stirring regularly, before adding creamy pesto mixture, along with 200ml of chicken stock. Stir well and bring sauce to a simmer. Once gnocchi is ready, add straight to sauce and toss together. Serve quickly if you want the gnocchi to stay crispy!
Serve the pan fried chicken breast, pine nuts and parmesan.

  • 500g of gnocchi.
  • Tbsp of extra virgin olive oil.
  • Salt and pepper, to taste.
  • 1/2 tbsp of dried basil.
  • 3 tbsp of pesto.
  • 3 tbsp of light cream cheese.
  • Sweet red pepper - finely chopped.
  • 200ml of boiling chicken stock.
  • 125g of pan fried chicken breast, per serving.
  • A handful fo pine nuts.
  • 15g of parmesan.
