Add chicken breast along with all chicken marinade ingredients to a large bowl and mix until fully combined, then set aside.
Heat a cast iron skillet or non-stick pan on high heat and add chicken breast pieces. Cook for 5-10 mins, until chicken is cooked through and just beginning to char, then remove form pan and set aside.
Reduce heat and add onion, red pepper, garlic, red chilli and tsp of olive oil to pan and cook down for 3-4 mins, stirring regularly. Add chopped tomatoes and a splash of water, stir to combine and simmer for 5 mins.
Meanwhile, get your penne cooking. When you drain the penne, be sure to reserve some pasta water.
Add cooked chicken back to pan, along with single cream, cajun seasoning, smoked paprika, oregano and chilli flakes, stir to combine and continue to simmer on low heat. If the sauce looks like it’s drying out too much, then hit it with a ladle of pasta water.
Once pasta is cooked, add to sauce and stir to combine. Stir in cheese and watch it melt into the pasta! Add some more pasta water to give the pasta that glossy finish we all know and love. Serve immediately. Garnish with grated parmesan and fresh basil.

For the cajun chicken marinade:

  • 400g of chicken breast - diced.
  • 1 clove of garlic - finely chopped. Juice of 1/2 a lime.
  • 2 tbsp of yoghurt.
  • Tsp of smoked paprika.
  • Juice of 1/2 a lime.

  • 350g of penne.
  • Tsp of Extra Virgin Olive Oil, for frying.
  • 2 cloves of garlic - crushed.
  • 1 onion - finely chopped.
  • 1 red bell pepper - finely chopped.
  • 1 red chilli - finely chopped.
  • 1/2 a tin of chopped tomatoes.
  • 100ml of single cream.
  • Tsp of smoked paprika.
  • Tbsp of cajun seasoning, or to taste.
  • Tbsp of oregano.
  • Tsp of chilli flakes.
  • 50-100g of cheese of your choice, we’re using a combination of parmesan, mozzarella and cheddar.
