If you like anything cajun then our Cajun Pasta Salad is a must try. It’s light and fresh but also filling but also with a super zesty, creamy Lime Cajun dressing and crispy prosciutto ham.

Boil a large saucepan of water and cook pasta until very al dente.
Coat chicken beast in cajun seasoning, smoked paprika, cayenne pepper, olive oil and greek yoghurt, then air fry at 200°C for 12 mins. Remove chicken and slice, then air fry prosciutto at 200°C for 5-6 mins, until crispy then chop into small pieces.
In a bowl, mix together Cajun-Lime dressing ingredients.
Add all salad ingredients to a large salad bowl, along with cajun chicken and crispy prosciutto, then drizzle over Creamy Cajun dressing and add parmesan before mixing.

For the chicken:

  • 400g of chicken breast - covered and bashed to 2cm thickness.
  • Tbsp of cajun seasoning.
  • Tsp of smoked paprika.
  • 1/2 tsp of cayenne pepper.
  • 1/2 tbsp of extra virgin olive oil.
  • 2 tbsp of 0% greek yoghurt.

For the creamy cajun dressing:

  • 200g of 0% fat greek yoghurt.
  • 2 tbsp of light mayo.
  • 1/2 tbsp of extra virgin olive oil.
  • Juice of 2 limes.
  • 3/4 tbsp of cajun seasoning.
  • 1/2 tsp of smoked paprika.
  • 1/4 tsp of chilli powder.
  • 1/2 tbsp of honey.
  • Tsp of dijon mustard.
  • 4 slices of prosciutto ham.

For the the salad:

  • 300g of pasta.
  • 1 bell pepper - chopped.
  • A handful of radishes - thinly sliced.
  • 1/2 a pack of cherry tomatoes - cut in half.
  • 1/2 a pack of cherry tomatoes - cut in half.
  • 1 tin of sweetcorn - drained.
  • 1 cos lettuce - chopped.
  • 20g of parmesan - grated.
