Preheat oven to 175°C/ 350°F.
In a large mixing bowl, mix together eggs, vanilla protein and milk until fully combined. Then, add cinnamon, salt, nutmeg, baking powder until fully combined.
Slice your croissants in half, dip each piece in your French toast mixture, then stack in a large baking dish, in a criss cross fashion. Pour remaining mixture over croissants, garnish with chopped strawberries and blueberries, then cover and leave to soak for 15 mins.
Remove cover and bake for 30 mins, until edges are golden and crispy but croissants are still soft inside.
Remove from oven and serve immediately. Drizzle with some maple syrup.

  • Tsp of cinnamon.
  • 1/4 tsp of salt.
  • 1/2 tsp of nutmeg.
  • 1/2 tsp baking powder.
  • 8 croissants.
  • Chopped strawberries and Blueberries, to garnish.
  • 2 tbsp of maple syrup, to garnish.
