Cheesy Twice Baked Potatoes

  These Cheesy Twice Baked Potatoes are the epitome of comfort food. They are stuffed with a super cheesy, creamy and chivey filling, as well as chicken and bacon to increase the protein content.

Preheat oven to 200C/ 400F.
Pierce potatoes all over, then transfer to a baking tay and bake for 45 mins to 1 hour.
Meanwhile, heat a few sprays of fry-lite in a non-stick pan and add chicken and bacon. Cook for 5-10 mins, until chicken and bacon starts to show colour on the outside, then remove from heat.
Once potatoes are baked, remove form oven and leave to cool for a 5 mins. Cut the tops of the potatoes, scoop out the potato filling and transfer to a large mixing bowl along with soured cream, semi-skimmed milk, red Leicester, chives and cooked chicken and bacon (reserving some crispy bacon bits to top potatoes). Mix it all together and season to taste with salt and pepper.
Add filling back to potato skins and top with red Leicester. Bake for 5-10 mins until cheese has melted.
Finally, top with crispy bacon bits and chives.

  • 4 potatoes.
  • 4 tbsp of soured cream.
  • 100ml of semi skimmed milk.
  • 100g of red Leicester - grated.
  • A large handful of chives - chopped.
  • 200g of chicken breast - thinly sliced.
  • 100g of bacon - fat trimmed. Weight after being trimmed.
  • Salt and pepper, to taste.
