Add sheet of Nori to a blender or food processor and blitz for 30 seconds. Add chickpeas to blender with nori and vlitz until chickpeas are broken down but not completely smooth.
Transfer to a large mixing bowl, add spring onions, vegan mayonaise, malt vinegar, salt, pepper and mix until combined.
Butter your Genius Super Powered Seeded Rolls, add tomato and cucumber slices, add chickpea ‘tuna’, then lettuce and enjoy!

For the Chickpea 'Tuna' Mayo:

  • 1 tin of chickpeas - drained and rinsed.
  • 1 sheet of Nori.
  • 3 spring onions - finely chopped.
  • 4 tbsp of vegan mayonnaise.
  • Tbsp of malt vinegar.
  • Salt and pepper, to taste.

To serve:

  • 3 Genius super powered seeded rolls.
  • Tomato slices.
  • Chunky cucumber slices.
  • Vegan Butter.
  • Lettuce.
