Creamy Chipotle Chicken Pasta

One of my favourite high protein pasta dishes! Our Creamy Chipotle Chicken Pasta is the perfect weeknight dinner or mela prep option.

Boil a large saucepan of salt water and cook pasta until al dente.
Coat chicken breast in chipotle fajita seasoning, chipotle paste, extra virgin olive oil, salt and pepper. Heat a few sprays of low calorie cooking spray in a non-stick pan and cook chicken for 5-10 mins until cooked through, then remove from pan.
Add onion and peppers and cook for 5 mins until soft, then add light cream cheese, tomato puree, chipotle paste, garlic granules, smoked paprika, dried parsley, cherry tomatoes and 2 ladles of pasta water and cooked chicken back to pan and stir to combine, creating a creamy sauce.
When pasta is cooked, drain and reserve pasta water if needed, then add pasta to sauce along with light cheddar and stir to combine

Serves 4

For the chicken:

  • 500g of chicken breast- diced.
  • Chipotle fajita seasoning, to taste.
  • 1/2 tbsp of chipotle paste.
  • 1/2 tbsp of extra virgin olive oil.
  • Salt and pepper, to taste.

For the pasta:

  • 300g of penne
  • 1 onion - finely chopped.
  • 2 bell peppers - finely chopped.
  • 4 tbsp of light cream cheese.
  • Tbsp of tomato puree.
  • 1/2 tbsp of chipotle paste.
  • Tsp of garlic granules.
  • Tsp of smoked paprika.
  • Tsp of dried parsley.
  • A handful of cherry tomatoes.
  • 30g of light cheddar.
