Creamy One Pot Fajita Chicken Pasta

Kicking off ‘The Good Bite’s Light Bites’ series with this bomb Creamy One Pot Fajita Chicken Pasta. It's ready in 15 mins, 500 cals per serving, high protein and so tasty. The pasta is cooked in risotto style using milk, which is really good technique for saving on calories when you want a creamy dish.

Season chicken tenders with 1 tbsp of fajita seasoning and prep onion and pepper.
Heat tbsp of olive oil in a non-stick pan and add chicken tenders. Cook for 3-4 mins on each side, until cooked through and showing colour, then remove from pan and set aside.
Add onion and pepper to pan and sauté 3-4 mins, before adding penne, milk, diced tomato, 1-2 tbsp of fajita seasoning and oregano. Mix well and bring pan to a very low simmer. Stir the penne very regularly, it will cook in a risotto style, soaking up the milk and fajita seasoning. This should take approximately 10 mins, if the liquid runs dry before pasta is cooked, add splashes of warm water or milk.
Once penne is cooked and milk has been soaked into pasta, add jalapeños and parmesan cheese. Stir well to combine and you’re ready to serve. Slice chicken into bite-sized pieces and serve on top of pasta.

  • Tbsp of extra virgin olive oil.
  • 400g of chicken tenders.
  • 2-3 tbsp of fajita seasoning.
  • 1 onion - finely chopped.
  • 1 bell pepper - finely chopped.
  • 300g of penne.
  • 1 large tomato - diced.
  • 400ml of skimmed milk.
  • Tbsp of oregano.
  • 30g of parmesan cheese - grated.
  • 2-3 Jalapeños - deseeded and thinly sliced.
