Preheat the oven to 180°C/ 375°F.
Dip chicken breasts in plain flour, then egg wash, then coat completely in panko breadcrumbs.
Heat olive oil in a large pan on medium heat and add chicken breast. Fry for 4 mins on each side, until golden, then transfer to a baking tray and bake for 15 mins, or until chicken is cooked through. Remove from oven and add Camembert slices to chicken breast, then add back to oven for 3-4 mins, until melted.
To build you burger, add light mayonnaise to your buns, then chicken breast. Top with cranberry sauce, tomato slice, red onion slice and and lettuce.
