Crispy Chilli Beef Noodles – Meal Prep

Add beef strips, egg whites, soy sauce and Chinese five spice to a large bowl and massage marinade into beef strips. Add cornflour to a large Tupperware box, then transfer beef strips to Tupperware box, seal the box and shake vigorously until beef strips are coated in cornflour.
Mix together Sweet Chilli Sauce ingredients in a separate, medium bowl.
Transfer beef to air fryer, toss with groundnut oil (or spray with low calorie cooking spray for lower calorie option) and air fry at 200°C for 10 mins, until crispy. Alternatively, heat groundnut oil in a non-stick pan and fry beef until crispy.
Place egg noodles in a boiling saucepan of water, then turn off heat and leave them to soak for 5-6 mins. Drain noodles and rinse under cold water, transfer to a large mixing bowl and toss with sesame seed oil. Add 1/2 of sweet chilli sauce, lime juice, red bell pepper, radishes, spring onions (reserving some for garnishing) and toss to combine.
Add crispy beef, remaining 1/2 of sweet chilli sauce and red chillies to a large pan and cook on medium heat, tossing together, until sauce thickens and coats crispy beef.
Serve noodle with Crispy Chilli Beef, garnish with spring onions and store in an airtight container in the refrigerator. This will keep for 3-4 days.

For the Sweet Chilli Sauce:

  • Tbsp of soy sauce.
  • 4 tbsp of reduced sugar sweet chilli sauce.

  • 2 tbsp of ketchup.

  • 3 tbsp of honey.

  • Tbsp of tomato puree.

  • 4 tbsp of rice vinegar.
  • 1 clove of garlic - finely grated .
  • Thumb sized cube of ginger - finely grated.

For the Crispy Beef:

  • 2 egg whites.
  • Tbsp of soy sauce.
  • Tsp of Chinese five spice.
  • 400g of lean beef strips.
  • 100g of cornflour.
  • Tbsp of groundnut oil for air frying/ frying.

For the noodle salad:

  • 4 nests of medium egg noodles.
  • 1/2 tbsp of sesame seed oil.
  • Juice of 1 lime.
  • Tbsp of sriracha.
  • 1 red bell pepper.
  • A handful of radishes - chopped.
  • 4 spring onions, reserve some for garnishing - thinly sliced diagonally.
  • 2 red chillies, thinly sliced.
