Break tofu into bite sized pieces using your hands, then transfer to a large mixing bowl. Add soy sauce, salt and pepper, then mix together to make sure tofu is coated. Add cornflour and then mix again, you can even shake the whole bowl to toss tofu in cornflour, make sure tofu is coated in cornflour and set aside.
In a small bowl, whisk together all Sweet Chilli Sauce ingredients.
Heat groundnut oil in a large non-stick pan until very hot, then add tofu and fry for 5 mins, tossing regularly until golden all over. Remove from pan and set aside.
Add remaining 1/2 tbsp of groundnut oil to pan and add onion and red pepper. Cook for 3-4 mins, then add garlic and ginger and sauté for 1 mins before adding sweet chilli sauce.
Bring sweet chilli sauce to a rapid simmer and leave to simmer for 1 min before adding crispy tofu, spring onions and red chilli. Toss to combine and simmer sauce until thick. Serve immediately. Garnish with sesame seeds.
