Garlic Butter & Chilli Spaghetti

Add chicken breast, garlic granules, smoked paprika, olive oil and salt to a large bowl and mix until combined. Bring a large saucepan of salted water to boil.
Heat a few sprays of fry-lite in a non-stick pan and add chicken breast. Cook for 5-10 mins, on medium heat, until chicken is cooked through, then remove from pan and set aside.
Add spaghetti to saucepan of boiling water. Cook until al dente.
Add butter to pan and allow to melt, then add garlic and chilli flakes. Stir to combine and sauté for 1-2 mins, until garlic is fragrant, then add tomato puree, light cream cheese and a ladle of pasta water and stir to combine, creating a creamy red sauce.
Once spaghetti is al dente, using a pair of tongs, transfer spaghetti directly to pan with creamy sauce, plus two ladles of pasta water and chopped parsley, then toss to combine. Slice up chicken into smaller pieces if you wish, then transfer to pan along with grated parmesan. Season to taste before serving.

  • 300g of chicken breast - diced.
  • Tsp of garlic granules.
  • Tsp of smoked paprika.
  • 1/2 tbsp of extra virgin olive oil.
  • Salt, to taste.
  • Fry-lite, for frying chicken breast.
  • 40g of unsalted butter.
  • 4 cloves of garlic - finely chopped.
  • Tsp of chilli flakes.
  • Tbsp of tomato puree.
  • 2 tbsp of light cream cheese.
  • 225g of spaghetti.
  • 30g of parmesan - grated.
  • A handful of parsley- chopped.
