10 Min Fried Rice with Beef

The quickest but most satisfying fried rice you’ll ever eat! Theres a perfect balance of sweet and salty and this is a super satisfying and comforting, nut healthy meal. Plus, this works perfectly as meal prep if you double up the quantities.

Heat neutral oil on medium heat in a non-stick pan, then add garlic and ginger. Sauté for 1-2 mins, until just beginning to caramelise, then add beef mince and season with a little salt and pepper.
Cook beef mince for 2-3 mins, until brown all over, then add chilli flakes, sesame seed oil, soy sauce, honey and rice wine vinegar and stir to combine. Cook for 5 mins, until liquid has reduced and the beef starts to turn crispy.
Remove a few spoonfuls of beef mince and set aside, then add wholegrain basmati rice directly from the packet, along with baby pak choi. Fry rice for 3-4 mins, stirring constantly until rice is sizzling and pak choi is soft.
Meanwhile, heat a few sprays of fry-lite or a small amount of olive oil in a separate pan and fry two eggs.
Serve immediately or box up for meal prep. Place reserved beef mince on top of rice then add carrots, radishes and coriander and finally finish with some sesame seeds and drizzled crispy chilli oil.

For The Fried Rice with Beef:

  • 250g of lean beef mince.
  • 1/2 tbsp of neutral oil, such as peanut oil.
  • 3 cloves of garlic.
  • 2” inch pieces ginger.
  • 250g of 5% fat beef mince.
  • 1/2 tsp of chilli flakes.
  • 1/2 tbsp of sesame seed oil.
  • Tbsp of soy sauce.
  • 1/2 tbsp of honey.
  • ½ tbsp of rice wine vinegar.
  • Baby pak choi - thinly sliced.
  • 250g microwaveable pack of brown basmati rice.
  • 2 eggs, 1 per serving

To serve:

  • 1 carrot - julienned.
  • 3-4 radishes - thinly sliced.
  • Fresh coriander.
  • Sesame seeds.
  • Crispy chilli oil, to drizzle.
