Preheat oven to 175°C/ 350°F.
Slice each pastry into 3 widthways, then transfer to large baking dish.
Mix together milk, chocolate protein, cocoa powder, eggs, vanilla and salt until fully combined with no lumps. Pour mixture over pastries, then leave pastries to soak up mixture for 5 mins.
Meanwhile, chop dark chocolate into chunks then scatter over pastries. Bake pain au chocolat bake for 45 mins. Dust with icing sugar before serving.

  • 400ml of milk.

  • 2 tbsp of cocoa powder.
  • 3 eggs.
  • A pinch of salt.
  • Tsp of vanilla.
  • 50g of dark chocolate
