If baking the chips in the oven as opposed to an air fryer, preheat the oven to 180°C/ 365°F.
Firstly, soak the chips in cold water for 10 minutes to release their starch, drain and rinse off any remaining starch, then bring a large saucepan of salted water to the boil and par boil the chips for 5 minutes, drain into a colander and leave to cool.
Mix together the spice mix ingredients.
Transfer the chips to a lined baking tray or air fryer basket depending on whether you are baking in the oven or air fryer. Season the chips with roughly 1 tbsp of the spice mix and cornflour, then coat in the olive oil. Bake the chips for 30-40 minutes, flipping once at the halfway point. Alternatively, air fry for 20-25 minutes, shaking once or twice throughout the cook time.
Butterfly, then coat the chicken breasts in the spice mix, olive oil, garlic and lemon juice. In a large bowl mix together the greek salad ingredients. In a separate, medium bowl, mix together the tzatziki ingredients.
When the chips are nearly ready, heat a little olive oil in a non-stick pan, sear the chicken for 3-4 minutes on each side, until showing colour and the garlic begins to caramelise. Then you are ready to serve!
