Gyros Chicken & Chips

This is essentially a deconstructed Gyros. Crunchy and herby chips, garlicky chicken, creamy tzatziki and a fresh Greek salad. Episode 9 of EASY weeknight dinners.

If baking the chips in the oven as opposed to an air fryer, preheat the oven to 180°C/ 365°F.
Firstly, soak the chips in cold water for 10 minutes to release their starch, drain and rinse off any remaining starch, then bring a large saucepan of salted water to the boil and par boil the chips for 5 minutes, drain into a colander and leave to cool.
Mix together the spice mix ingredients.
Transfer the chips to a lined baking tray or air fryer basket depending on whether you are baking in the oven or air fryer. Season the chips with roughly 1 tbsp of the spice mix and cornflour, then coat in the olive oil. Bake the chips for 30-40 minutes, flipping once at the halfway point. Alternatively, air fry for 20-25 minutes, shaking once or twice throughout the cook time.
Butterfly, then coat the chicken breasts in the spice mix, olive oil, garlic and lemon juice. In a large bowl mix together the greek salad ingredients. In a separate, medium bowl, mix together the tzatziki ingredients.
When the chips are nearly ready, heat a little olive oil in a non-stick pan, sear the chicken for 3-4 minutes on each side, until showing colour and the garlic begins to caramelise. Then you are ready to serve!

Ingredients

Serves 2

Chips:

  • 500g of maris piper potatoes - peeled and cut into chips.
  • Tbsp of cornflour.
  • Tbsp of extra virgin olive oil.

Spice mix:

  • Tsp of smoked paprika.
  • 1/2 tsp of cumin.
  • Tsp of garlic granules.
  • 1/2 tbsp of oregano.
  • Tsp of salt.
  • Freshly ground black pepper, to taste.

Garlic Chicken:

  • 2 chicken breasts.
  • 1/2 tbsp of extra virgin olive oil.
  • 3 cloves of garlic - crushed.
  • Juice of 1/2 a lemon.

Greek salad (this is enough for 3-4 servings):

  • 4-6 tomatoes - cut into quarter.
  • 1/2 a cucumber - fleshy centre scooped out and chopped.
  • 1/2 a red onion - thinly sliced.
  • 1 green pepper - chopped.
  • 1/2 tbsp of extra virgin olive oil.
  • Tbsp of red wine vinegar.
  • Oregano, to taste.
  • Salt and pepper, to taste.

Tzatziki:

  • 150g of 0% fat greek yoghurt.
  • Tsp of extra virgin olive oil.
  • Juice of 1/2 a lemon.
  • 1/2 a cucumber - grated and squeezed of excess liquid.
  • Salt and pepper, to taste.
  • 1-3 cloves of garlic - grated, depending on how garlicky you want it!
