High Protein Blueberry Jam Muffins

Preheat oven to 180C/350F.
Scatter 2 tbsp of oats onto a baking tray and bake 10 mins, until lightly toasted.
In a large bowl, mix together banana and egg.
Then add cinnamon, baking powder, honey, Greek yoghurt and whey protein. Mix that together and then add oats and milk and mix until completely combined.
Next, fill 6 muffin cups to roughly halfway with the mixture, add 3-4 blueberries per muffin and continue fill the muffin cups up to just below the brim with remaining mixture.
Top your muffins off with a few more blueberries and toasted oats and bake for 30 mins.
Once 30 mins is up, remove them and allow them to cool for ten mins before eating.

  • 1 egg - beaten.
  • Tsp of cinammon.
  • Tsp of baking powder.
  • 100g of Greek yoghurt.
  • 2 scoops of vanilla whey protein powder.
  • Tbsp of honey.
  • 150g of oats.
  • 75ml of milk.
  • 50g of blueberries.
