Peanut Butter Stuffed Protein Pancakes

In a large bowl, mix together all dry ingredients.
Then add wet ingredients and mix together until there are no lumps. Alternatively, you can add all ingredients to a blender and blitz.
Heat a small amount of coconut oil in a non-stick pan on a low-medium heat.
Add roughly 1/4 of your pancake mixture to the pan, move the pan around to shape your pancake into a circle and leave to fry for 2-3 mins.
Using a teaspoon, add your peanut butter to the pancake, spread it using your spoon and then cover with a little more pancake mixture.
Flip your pancake and fry for 2-3 mins. Repeat until you have use up your pancake mixture.
Garnish with blueberries, raspberries, chopped nuts and a drizzle of maple syrup.

For The Pancakes

  • 50g of oat flour (blended oats).
  • 1 scoop of vanilla impact whey protein.
  • 1/2 tsp of baking powder.
  • Tsp of cinnamon.
  • A pinch of sea salt.
  • 1 banana - mashed.
  • 1 egg.
  • Tbsp of peanut butter.
  • 100ml of milk.
  • Coconut oil - for frying.
  • 40g of peanut butter - for stuffing your pancake.

To Garnish

  • Blueberries
  • Raspberries
  • Chopped nuts
  • Maple syrup
