Preheat the oven (if using) to 200°C/ 400°F and prepare a lined baking tray.
Season chicken tenders with salt and smoked paprika until then dip in the eggs and cornflakes until coated all over. Transfer the tenders to the baking tray, spray with low calorie cooking spray and bake for 15 minutes. Alternatively, place in an air fryer and air fry at 200°C/ 400°F for 12-15 minutes.
Mix together the Honey Chipotle sauce in a medium bowl, then transfer to a pan and bring to a gentle simmer, on low-medium heat. Cook the sauce for 2-4 minutes until bubbling and thick, then transfer to a dish.
Once the tenders are golden and crispy, dip them in the honey chipotle sauce.
