Honey Chipotle Steak Bowl

Succulent, sticky and spicy Honey Chipotle Steak Bites served on a bed of fluffy basmati rice, with a black bean and corn salsa, guacamole and pickled onions. This recipe is a big, heartybowl of high protein nourishing goodness.

Season the sirloin steak bites all over with salt, pepper, garlic granules and onion granules.
In a small bow, mix together the honey chipotle sauce ingredients.
In a separate small bowl, mix together all chipotle soured cream ingredients.
Make the salsa. Pan fry the sweetcorn in a non-stick pan, on medium heat, for 5 minutes until showing colour. Add the sweetcorn along with remaining salsa ingredients to a large bowl and mix until combined.
Heat the butter, on medium heat, in a cast iron or non-stick pan, sear the steak bites for 5-10 minutes stirring regularly, until brown all over and beginning to caramelise and turn crispy. Add the Honey Chipotle sauce and cook until the steak bites are sticky and coated all over.
Serve the Honey Chipotle Steak Bites on a bed of basmati rice along with the Black Bean & Corn Salsa, guacamole and pickled onions. Drizzle with Chipotle Soured Cream before serving.

Ingredients

Serves 2

Honey Chipotle Steak Bites:

  • 1 thick cut sirloin steak - diced.
  • Tbsp of unsalted butter.
  • Salt and pepper, to taste.
  • 1/2 tbsp of garlic granules.
  • 1/2 tbsp of onion granules.

Honey Chipotle Sauce:

  • 2 tbsp of runny honey.
  • Tsp of chipotle paste.
  • Juice of 1/2 a lime.
  • 2 tbsp of water.

Chipotle Soured Cream:

  • 2 tbsp of soured cream.
  • 1/2 tsp of chipotle.
  • Juice of 1/2 a lime.

Black Bean and Corn Salsa:

  • 1 tin of black beans - drained and rinsed.
  • 1 tin of sweetcorn - drained and rinsed.
  • 4 tomatoes - finely chopped.
  • 1 jalapeno - finely chopped.
  • Juice of 1/2 a lime

To serve:

  • Tbsp of guacamole, per serving.
  • Pickled onions.
  • 125g of cooked basmati rice, per serving.
