Lasagna Orzo Soup

Lasagna Soup went viral recently so we decided to try our own, with Orzo (on of our faves) and it came out so good! Super comforting, super easy to make and tasty as anything!

Heat olive oil in a deep pan, on medium heat, then add onion - cook for 5 mins, then add garlic and cook for 2 mins. Add beef mince and sausage meat - season to taste, stir well, breaking up meat into small pieces, then cook until brown all over.
Add marinara/ pasta sauce and oregano to pan, simmer for 10 mins, before adding chicken stock, basil and orzo - bring pan to a low simmer and cook orzo until al dente, stirring regularly and ensuring orzo doesn’t stick to bottom of pan. If sauce dries out and becomes too thick, add more boiling water to pan, you want to keep the sauce quite loose, like a soup!
Once orzo is cooked, stir in mozzarella and parmesan - once melted you are ready to serve.

  • Extra virgin olive oil.
  • 1 onion - finely chopped.
  • 3 cloves of garlic - crushed.
  • 200g of beef mince.
  • 2 sausages - deskinned.
  • 250g of orzo.
  • 125g of mozzarella.
  • 500g of marinara or tomato pasta sauce.
  • 1/2 tbsp of oregano.
  • Salt and pepper, to taste.
  • 500ml of boiling chicken stock.
  • 1/2 a bunch of fresh basil.
  • 30g of parmesan.
  • 125g of mozzarella.
