Lighter Mac ‘N’ Cheese

Bring a large saucepan of water to boil and salt the water.
Heat a separate large deep pan on a medium heat and melt butter in pan.
Add garlic to butter and sauté for 1 min, careful not to burn!
Add flour, smoked paprika and a small amount seasoning to pan and whisk into butter. Now is a good time to get your pasta cooking.
Gradually whisk your milk into butter and flour mixture on a medium-high heat until you are left with a smooth and lump-free sauce. This may take 5-10 mins.
Stir cheddar into sauce until completely melted. Season to taste, be liberal with your black pepper!
Finally stir macaroni into sauce and your mac n cheese is ready! Add chicken or a vegan substitute to add more protein to your dish. Garnish with parmesan and basil.
