Loaded Fries with Pea Guacamole

Preheat oven to 180°C/ 356°F.
In a small bowl, mix together seasoning mix until fully combined.
To a large bowl, add French fries, olive oil and 1/2 of seasoning mix, then shake and mix until French fries are coated all over. Transfer French fries to a large baking tray and bake for 15-17 mins, flipping once throughout cook time.
Add chicken breast to a separate bowl and coat in remaining seasoning, or to taste.
For the pea Guacamole, cook the Birds Eye Petits Pois as per the pack instructions, once they're piping hot and ready then cool the peas in iced water before adding to a food processor, along with lime juice, garlic, jalapeño and cumin - add water to loosen if needed and aim for a chunky but well combined mixture. Transfer mixture into a large bowl and add tomatoes and hot sauce, then mix until combined.
Heat a few sprays of low calorie cooking spray in a non-stick pan and add seasoned chicken - cook for 5-10 mins, stirring frequently, until cooked through.
Add cheesy slices and milk to a medium bowl, then microwave for 10 second intervals, stirring each time, until you are left with a smooth cheese sauce.
Mix together garlic-herb sauce ingredients in a small bowl.
Time to load your fries: add baked fries to a plate, then top with chicken, cheese sauce, garlic-herb sauce and then your pea guacamole! Garnish with spring onions.

Serves 4

For the Pea Guacamole:

  • 320g of Birds Eye Petits Pois.
  • Juice of 1 lime.
  • 1 clove of garlic - chopped.
  • A handful of fresh coriander - stems removed.
  • 1 jalapeño - deseeded and chopped.
  • Tsp of cumin.
  • 2 tomatoes - diced.
  • A few dashes of hot sauce (optional).

Seasoning Mix:

  • Tsp of salt.
  • 2 tsp of cumin.
  • 2 tsp of garlic.
  • 2 tsp of smoked paprika.
  • Tsp of cayenne pepper.

The rest:

  • 300g of frozen French fries.
  • Tbsp of extra virgin olive oil.
  • 200g of chicken breast- cut into bite-sized chunks.
  • 3 cheesy slices.
  • 2-4 tbsp of milk.
  • 2 spring onions - finely chopped, to garnish.

Garlic-Herb sauce:

  • 100g of 0% fat yoghurt
  • Tsp of garlic granules.
  • Tsp of parsley.
