Marry Me Salmon & Chunky Chips

Delicious Marry Me Salmon bites served on Chunky homemade Chips. The salmon bites are seasoned to perfection, then pan fried to create a delicious herby crust exterior, we then make our creamy, rich and tomatoey marry me sauce in the same pan, which is poured all over the salmon bites. Served on golden chips alongside a thirty second green salad.

Preheat the oven to 180°C fan/ 200°C/ 365°F.
Cut the potatoes into chunky chips by slicing in half lengthways, then in half lengthways again, then cut the remaining pieces lengthways again into 2 or 3 to create chunky chips/ wedges. For the best chips, follow these steps! Rinse the chips with cold water to wash away the starch. Bring a large saucepan of generously salted water to the boil, par boil the chips for 6 minutes, then drain and leave to cool completely before cooking. You can speed up the cooling process by placing them in the fridge.
Transfer the chips to a large lined baking tray (I used two baking trays, so there was more space for the chips to bake), drizzle with the olive oil, make sure the potatoes are coated all over, then bake for 25 minutes. Flip the chips after 25 minutes and then bake for another 15-25 minutes, until golden, crunchy and crispy!
Meanwhile, either mix the seasoning together in a bowl, or grind using a pestle and mortar. Pat dry the salmon bites, then dip the salmon into the seasoning mix, make sure they are coated all over and set aside.
When the chips are nearly ready, heat the olive oil for the marry me sauce in a large, non-stick pan, sear the salmon bites over a medium-high heat for 2 minute on each side, until showing a lovely dark and herby crust, then transfer to a medium lined baking tray. In the same pan, sauté the garlic for 1-2 minutes, stir in the tomato paste and cook for 1-2 minutes over a high heat, add the sun-dried tomatoes, cook for 2 minutes, then stir in the stock and cream and bring the sauce to a low simmer. Cook the sauce for 10 minutes, stirring regularly, until the sauce is thick. Taste for seasoning, stir in the parmesan and parsley, then remove from the heat once the sauce has reached your desired consistency.
Once the chips are removed from the oven, place the salmon bites in the oven for 2-4 minutes, to reheat. In a large bowl, mix together the green salad. Serve the chips and salad onto a plate, add the salmon bites, pour over that delicious marry me sauce. Garnish with a little parmesan and fresh parsley.

Serves 4

  • 4 salmon fillets - cut into 3-4cm pieces.
  • 1.25kg of Maris Piper potatoes - peeled.
  • 2 tbsp of extra virgin olive oil for the chips.

Seasoning mix:

  • 1.5 tbsp of garlic granules.
  • 1.5 tbsp of onion granules.
  • Tbsp of smoked paprika.
  • Tsp of chilli powder.
  • Tsp of salt.
  • Black pepper, to taste.

Marry Me Sauce:

  • 1/2 tbsp of extra virgin olive oil.
  • 2 cloves of garlic - crushed.
  • 2 tbsp of tomato puree.
  • 40g of sun-dried tomatoes - finely chopped.
  • 300ml of boiling beef, vegetable or chicken stock.
  • 150ml of singles light cream.
  • Salt and pepper, to taste.
  • 20g of parmesan - grated.
  • A handful of fresh parsley - finely chopped.

Green Salad:

  • A big bunch of lettuce.
  • 1/2 tbsp of extra virgin olive oil.
  • Tsp of wholegrain mustard.
  • Tsp of honey.
  • A squeeze of lemon juice.
  • A dash of red wine vinegar.
  • Salt and black pepper, to taste.
