Peanut Butter Blondies

Preheat oven to 175°C/ 350°F.
In a large mixing bowl, combine peanut butter, maple syrup, egg and vanilla. Then mix in oat flour and bicarbonate of soda. Finally, fold in 3/4 of chocolate chunks, saving some for topping blondies.
Transfer mixture to a 8”x8” lined baking tray, flatten and smooth the top then bake for 12-15 mins. Once baked, remove from oven and leave to cool and firm completely before slicing into 16 bites.
