In a large mixing bowl or food processor, combine oat flour, ground almonds and vanilla impact whey.
Then, add peanut butter, coconut oil, vanilla extract and mix together until your mixture resembles cookie dough. If using a food processor, transfer to a large mixing bowl and fold your choc chips into the mixture.
Split and form the mixture into 15 evenly sized ball, place each ball on on a lined baking tray and freeze for 1 hour minimum. When the hour is up, melt together your your choc chips and coconut oil in a large microwaveable bowl. I do 1 min in the microwave, give it a stir and then another 30s - 1 min.
Keeping your cookie dough bits on your lined baking tray, drizzle each bite with melted chocolate until completely and refrigerate until set.
Add melted white chocolate for decoration (optional) and allow to chill for ten minutes in the fridge. Enjoy!!
