Peri Peri Roast Chicken
This is my Peri Peri Roasted Chicken and it's perfect for batch cooking and prepping for the week. This can be used to make delicious rice bowls, serving with oven baked chips and slice it up and save to make delicious sandwiches.

Ingredients
Serves 4-6
Peri Peri Sauce:
- 2 red peppers - chopped into halves.
- 4 tbsp of extra virgin olive oil, plus some for roasting the peppers.
- 3 red chilli - deseeded and chopped.
- Tsp of smoked paprika.
- 3 cloves of garlic - roughly chopped.
- Tbsp of dried oregano.
- 2 tbsp of red wine vinegar.
- Juice of 1/2 a lemon
- 1/2 tsp of chilli powder.
