Peri Peri Roast Chicken

This is my Peri Peri Roasted Chicken and it's perfect for batch cooking and prepping for the week. This can be used to make delicious rice bowls, serving with oven baked chips and slice it up and save to make delicious sandwiches.

Preheat the oven to 200°C/ 400°F.
Place the peppers in a large baking dish or roasting tin, drizzle with a little olive oil, season with a pinch of salt and roast for 25 minutes, until soft and charred. Reduce the heat in the oven to 180°C/ 365°F.
Transfer the peppers along with rest of the peri peri sauce ingredients to a blender and blitz until smooth.
Place the chicken in the same large baking dish or roasting tin, carefully make an incision into the bottom of the chicken breast, part the skin from the breast and slide the pieces of butter underneath the skin and into the centre of the chicken beast. Season the chicken all over with a little salt and pepper, the peri peri rub, drizzle with a little oil and stuff the cavity with the lemon and orange.
Roast the chicken for 45 minutes. Remove the chicken from the oven, baste the roasting juices all over and cover with tin foil. Roast for a remaining 45 mins - 1 hour +, depending on the cook time which will be indicated in the instructions on the packaging.

Ingredients

Serves 4-6

Peri Peri Sauce:

  • 2 red peppers - chopped into halves.
  • 4 tbsp of extra virgin olive oil, plus some for roasting the peppers.
  • 3 red chilli - deseeded and chopped.
  • Tsp of smoked paprika.
  • 3 cloves of garlic - roughly chopped.
  • Tbsp of dried oregano.
  • 2 tbsp of red wine vinegar.
  • Juice of 1/2 a lemon
  • 1/2 tsp of chilli powder.

For roasting:

  • 2 tbsp of butter.
  • Tbsp of peri peri rub.
  • A small drizzle of olive oil.
  • 1/2 a lemon.
  • 1/2 an orange.

To serve:
