Heat olive oil in a large deep casserole pan or frying pan, then add sausage meat to pan. Cook sausage for 5-7 mins until brown on the outside, then remove from pan using a slotted spoon, reserving the sausage fat in the pan.
Add celery, leek and carrots to pan and cook for 5 mins, stirring regularly, then add cooked sausage back to pan along with sweet potato, chilli flakes, smoked paprika and chicken/ veg stock. Bring pan to a low simmer and cook for 20 mins, or until sweet potatoes are soft enough to pierce with a fork. Add kale to pan 5 mins before serving and season to taste.

For the soup

  • Tbsp of extra virgin olive oil.
  • 6 sausages - deskinned and cut into large chunks.
  • 2 celery ribs. - finely chopped.
  • 1 leek - chopped.
  • 2 carrots - peeled and chopped.
  • 2 sweet potatoes - peeled and cut into large chunks.
  • Tsp of chilli flakes.
  • Tsp of smoked paprika.
  • 1.5L of chicken or veg stock.
  • Salt and pepper, to taste.
