Preheat oven to 175°C/ 350°F.
In a large mixing bowl, combine oats, oat flour, almond flour and salt. Then add coconut oil and maple syrup and mix until fully combined.
One by one, scoop out 16 heaped 1/2 tbsp of the mixture (precise, I know but this will give you 16 equal amounts), then add them to two lined baking trays to bake in two batches. Carefully flatten and shape each ball of mixture into circles 3" in diameter. You want to make sure there is space in between each biscuit because they will expand when baked. Bake for 12 mins, then remove and leave to cool.
Once cooled, melt chocolate chunks in the microwave, then drizzle roughly 1/2 tsp of melted milk chocolate onto each biscuit and spread to cover. Then melt dark chocolate and drizzle over biscuits in lines to decorate. Store in an airtight container for 3-4 days.

  • 80g of maple syrup.
  • 50g of chocolate - broken into chunks.
