Slow Cooker Chipotle Beef

Our Slow Cooker Chipotle Beef is the perfect meal prep recipe. It so easy to make and can be used for a variety of different recipe. The flavour is unmatched and after the 4 hours of slow cooking the beef will literally fall apart in your hands.

Firstly, add all Chipotle sauce ingredients to a blender a blitz until smooth.
Season steak liberally with salt and pepper all over, then heat butter in a cast iron skillet, until smoking. Sear steak for 3-4 mins on every side, then transfer to slow cooker. Pour Chipotle sauce over steak, add bay leaves, then cover. Slow cook on high for 4-6 hours, until you can pull beef apart using two forks.

For the Chipotle sauce:

  • 400ml of hot beef stock.
  • 2 tbsp of cumin
  • 2-3 tbsp of chipotle paste ( depending on how got you want it).
  • 2 tbsp of oregano.
  • 1/2 tbsp of smoked paprika
  • Tbsp of onion granules.
  • Juice of 1 lime
  • 4 cloves of garlic - crushed.
  • 1/2 tsp of salt.
  • 2 tbsp of apple cider vinegar.

For the rest:

  • 1kg of braising steak, we used Angus Aberdeen.
  • Salt and pepper, to taste.
  • Tbsp of butter.
  • 2 bay leaves.
