TGB’s Easy Naked Bowl

This Indian Inspired Easy Naked Bowl is one of the most fuss-free recipes you will find and it’s made that bit easier by the help of Whitworth’s delicious Microwavable Indian Lentil Dahl packs. Accompanied by a minty raita and punchy Kachumber salsa.

Add all Kachumber ingredients to a bowl and mix until combined.
Add all raita ingredients to a separate bowl and whisk together until combined and creamy.
To build your naked bowl, break off two lettuce leaves per serving and place in bowl, followed by Indian Lentil Dahl (can be served hot or cold), Chicken Tikka pieces, raita, kachumber and shredded red cabbage. Garnish with coriander.

Serves 3

For the Naked Bowl:

  • 2 packs of Whitworth’s Indian Lentil Dahl.
  • 350g of pre-cooked chicken tikka pieces (breast).
  • 350g of pre-cooked chicken tikka pieces (breast).
  • 1/2 of a red cabbage - finely shredded with a peeler.

For the Kachumber (Indian Salsa):

  • 2 tomatoes - finely chopped.
  • 1/2 a cucumber - finely chopped.
  • 1 small onion - finely chopped.
  • 2 jalapeños - deseeded and finely chopped.
  • 1/2 tbsp of white wine vinegar.
  • Juice of 1/2 a lemon.

For the Raita:

  • 250g of greek yoghurt.
  • 1/4 cucumber - grated and water squeezed out.
  • A handful of mint leaves - chopped.
  • Thumb sized piece of ginger - peeled and grated.
  • 1 clove of garlic - grated.
  • Juice of 1/2 lime.
  • 1/2 tsp of garam masala.
  • Tsp of extra virgin olive oil.
