Vegan Mac ‘N’ Cheese

First of all, make sure you soak your cashew in advance. These will help achieve a wonderful creamy sauce.
Heat olive oil in a pan and add onion. Fry for 3-4 mins until onion softens, then add garlic and fry for 2 mins.
Once cooked, remove from pan and add red pepper, skin side down. Cook for 3-4 mins, pressing pepper into pan with the back of a spoon or spatula to help it char. Flip and cook for another 3-4 mins.
Add onion, garlic, pepper, milk, nutritional yeast, smoked paprika, salt and pepper to a blender and blend until smooth.
Now is a good time to cook your pasta. Don’t forget to salt your pasta water generously.
Transfer the blended sauce to pan and bring to a simmer on low heat.
Simmer for 5 mins and add cooked pasta. Mix well, add a couple spoonfuls of pasta water to make it extra creamy and silky and then season to taste. Garnish with black pepper and chilli flakes.

For The Mac N Cheese

  • Tbsp extra virgin olive oil
  • 1 onion - chopped
  • 2-3 cloves of garlic - chopped
  • 1 sweet red pepper - cut into big chunks
  • 75g cashews (soaked for at least 2 hours)
  • 150ml of non-dairy milk
  • 2 tbsp nutritional yeast
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 250g of macaroni pasta - cooked
