Steak Potato Nachos

If you love nachos, but want to avoid the corn chips, but also love steak and impressing a group of people with your food, then our Steak Potato Nachos are for you! .

Preheat oven to 200°C/ 400°F.
Peel and slice your potatoes into very thin 1cm thick slices, then rinse with cold water and pat dry using a tea towel or paper towels.
Transfer slices to a large mixing bowl, then add olive oil, cumin, smoked paprika, garlic granules, cayenne pepper, salt and black pepper and mix well, until potato slices are coated in spices.
Transfer slices to 2 baking trays so you can cook these in two batches simultaneously, then bake for 10-12 mins, careful not to burn them!
Allow sirloin steak to come to room temperature, lightly season with salt and pepper, heat a cast iron to very hot, add small amount of oil or butter to pan and add steak. Sear for 2-3 mins on each side for medium-rare, then remove from pan. Leave steak to rest for a few mins, then slice it up.
Now, build your nacho bake! Nachos first, then steak, then onions and pepper, light cheddar and mozzarella, then bake for 15-20 mins.

For the potato nachos:

  • 1kg of Maris piper potatoes.
  • 1 tbsp of Extra virgin olive oil.
  • Tsp of cumin.
  • Tsp of smoked paprika.
  • Tsp of garlic granules.
  • Tsp of cayenne pepper.
  • Tsp of salt.
  • 1/2 tsp of black pepper.

For the toppings:

  • 1 sirloin steak.
  • Small amount of oil or butter, to fry steak.
  • 1 onion - diced.
  • 1 red pepper - diced.
  • 60g of grated cheddar.
  • 60g of grated mozzarella.
  • Salsa, to garnish.
  • Tbsp of chopped coriander.
