Firstly mix together, olive oil, soy sauce, balsamic vinegar, brown sugar, lemon juice, garlic, salt and pepper in a bowl.
Add your chicken breast, coat in your bbq marinade and set aside.
Add your cous cous to a large bowl, along with 350ml of boiling water and leave to sit for five mins.
Once the cous cous has soaked up the water, add your butter and stir it into the cous cous. Then, add chilli flakes, oregano, paprika, cucumber, cherry tomatoes and feta and mix well.
Heat a non-stick frying pan on a medium heat and add your marinated chicken breasts to the pan. Fry on each side for 5 mins, adding leftover bbq marinade to the pan (you can also save some to simmer down into a thicker sauce to add to your chicken breast when serving.
Check the chicken breast is cooked though, if they are particularly thick then you will need oven cook for a further 15-20 mins. Serve with a leafy green side salad and enjoy!
