BBQ Honey Chipotle Crispy Beef Bowl

This BBQ Honey Chipotle Crispy Beef Bowl is a quick and easy high protein dinner that packs so much flavour! Served with a speedy Grilled Corn salsa, cottage cheese, sweet potato and pink pickled onion, this is a nutritionally complete dinner that you'll be making time and time again and also lends itself perfectly to meal prep.

Preheat the oven to 180°C Fan/ 200°F/ 400°F. Add the sweet potatoes to a baking tray, season with a little BBQ seasoning, spray all over with the cooking spray and bake for 30-40 minutes.
Prepare the grilled corn salsa. Squeeze the excess liquid out of the chopped tomatoes into a bowl, then add to a large mixing bowl, along with the onion, coriander, jalapeños, lime juice. Heat a cast iron pan over a high heat, cook the sweetcorn for 2-3 minutes on each side, (pressing down firmly but carefully helps this process) until charred and blistering all over, then remove from the heat. Slice the sweetcorn off the husks, add to the bowl with the rest of the salsa, season to taste and mix until combined.
Heat the oil for the beef in a separate, large pan, sauté the onion and pepper for 2-3 minutes, over a medium-high heat, until soft, add the beef mince and salt, cook until brown all over, add the BBQ seasoning, garlic granules, mix to combine and cook for 2 minutes. Mix together the Honey Chipotle sauce ingredients in a medium bowl, then add to the beef mince, stir to combine and cook for 10-15 minutes, stirring every 2 minutes, until dark in colour and beginning to caramelise and turn crispy.
Now you’re ready to serve. Heat the rice, then add to a bowl with sweet potato, BBQ Honey Chipotle beef, cottage cheese and pink onions to a bowl. Sprinkle a little BBQ seasoning over and a drizzle of honey and enjoy!

Ingredients

Serves 4

  • 2 sweet potatoes - washed and chopped.
  • Low calorie cooking spray.
  • Tbsp of oil.
  • 1/2 a white onion - thinly sliced.
  • 1 red bell pepper, - thinly sliced.
  • 500g of 5% fat beef mince.
  • A generous pinch of salt.
  • Tbsp of BBQ seasoning, plus some for the sweet potatoes.
  • Tbsp of Garlic granules.

Honey Chipotle Sauce:

  • 1-2 tbsp of chipotle paste, depending on spice preference.
  • 2 tbsp of honey.
  • Juice of 1/2 a lime.

Grilled Corn Salsa:

  • 2 sweetcorn ears.
  • 2 tomatoes - finely chopped.
  • 1/2 a white onion - finely chopped.
  • 1-2 jalapeños - deseeded and finely chopped.
  • A handful of fresh coriander - chopped.
  • Juice of 1/2 a lime.
  • Salt and pepper, to taste.

To serve:

  • 100g of cooked basmati rice, per serving.
  • Pink pickled onions.
  • Tbsp of cottage cheese, per serving.
