Preheat the oven to 180°C/ 365°F.
Coat the chicken breasts all over in the cajun seasoning, then egg and cornflakes. Transfer to a lined baking tray and bake for 20-25 minutes, until cooked through.
When the chicken is nearly ready, add all the BBQ-Honey sauce ingredients to a small pan, stir to combine and cook over a medium heat for 2-4 minutes, stirring constantly, until bubbling and thick.
Drop the crispy chicken breast into the sauce, toss the chicken in the sauce until coated all over.
Make your burger. Add the mayonnaise to the brioche cup, then lettuce and BBQ-Honey chicken breast. Spoon over any remaining sauce onto the chicken then put the lid on your burger and enjoy!

- 2 chicken breasts - bashed to 3-4cm thickness.
- 1/2 tbsp of cajun seasoning.
- 1 egg - whisked together in a bowl.
- 50g of cornflakes - broken up with your hands into smaller pieces, how small is up to you!
- 2 brioche burger buns - cut in half and lightly toasted.
- 2 tbsp of light mayonnaise.
- Lettuce - chopped.
