Cajun Beef Stir Fry

Heat olive oil in non-stick pan and add beef mince. Season beef mince and cook for 2-3 mins until browned, then add onions, pepper, carrots and green beans. Continue to stir fry for for 5 mins.
Stir in cajun seasoning then add rice straight from the packet (no need to microwave beforehand). Stir well, then add sesame seed oil, tomato paste and a generous splash of water. Continue to stir fry for 2 mins until rice is soft and veg is cooked.
Garnish with chopped coriander and sesame seeds.

  • Tsp extra virgin olive oil.
  • 125g of lean beef mince.
  • Salt and pepper, to taste.
  • 1/2 an onion - finely chopped.
  • 1/2 a bell pepper - finely chopped.
  • 1 small carrot - peeled and chopped.
  • A handful of green beans - chopped.
  • Tbsp cajun seasoning.
  • 125g of microwavable basmati rice.
  • Tsp sesame seed oil.
  • 2 tbsp tomato paste.
  • Splash of water.
