Preheat oven to 200°C / 400°F.
Bring a large saucepan of water a simmer, add chips and parboil for 5 mins. Drain your chips and leave them to steam to evaporate excess water. Transfer chips to a baking tray and add olive oil, paprika, cumin, garlic granules, chilli powder and season generously. Give them a really good mix up and bake for 40-45 mins.
Meanwhile, heat a pan on a medium heat, add cooking spray and beef mince to the pan. Brown your beef and then add onion and pepper. Cook for 5 mins before adding garlic. Fry the garlic for 1-2 mins and then stir in your cumin, smoked paprika, chilli powder with a splash of water. Fry for 30 seconds, allowing the fragrances of the spices to release and then add chopped tomatoes.
Bring your pan to a low simmer and allow your tomatoes to cook down for 10 mins, stirring occasionally. Once cooked down, stir black beans into chilli and leave to simmer 5 more mins before removing from heat.
By now, your fries should be ready. Add chilli to top of fries, followed by cheese and bake for 5-10 mins, until cheese is melted. Once baked, garnish with spring onion and coriander.
