Chilli Sesame Chicken Tenders

Preheat oven to 190°C/ 375°F. Add chicken tenders, smoked paprika, soy sauce, salt and pepper to a large bowl, then mix until chicken is coated.
In a medium bowl, beat your eggs together. Using your hands, crush cornflakes into a large mixing bowl, so you have a mixture of small and large cornflakes.
Dip each chicken tender in egg, then cornflakes - press cornflakes into chicken tenders until coated all over. Transfer to a lined baking tray, spray with olive oil spray, then bake for 15-20 mins.
In a separate bowl, mix together Chilli-Sesame sauce ingredients, then add to pan on medium heat and simmer for 2 mins, before adding sesame seeds.
Transfer sauce to a tray or just dip baked chicken tenders into the sauce, in the pan, until coated all over. Garnish with extra sesame seeds.

For the chicken tenders:

  • 400g of chicken tenders.
  • 2 tsp of smoked paprika.
  • Tbsp of soy sauce.
  • Salt and pepper, to taste.
  • 2 eggs.
  • 90g of cornflakes

For the Chilli-Sesame sauce:

  • Tbsp of soy sauce.
  • 3 tbsp of sweet chill sauce.
  • 2 tbsp of ketchup.
  • 3 tbsp of honey.
  • 3 tbsp of rice wine vinegar.
  • 1-2 cloves of garlic - finely chopped.
  • Tbsp of sesame seeds.
