Creamy Fajita Wraps – Meal Prep

Our delicious Creamy Chipotle Wraps take 15 minutes to make,  are perfect for meal prep and low calorie. You’ll be excited for lunch every day of the week.

Add diced chicken breast to a large bowl and coat in tbsp of fajita seasoning. Heat olive oil in a large frying pan, then add chicken breast. Cook until chicken is showing colour all over, then add onion and peppers - cook for 5 mins until soft.
Add chipotle paste and light cream cheese to pan and stir to combine, you should be left with a creamy sauce. To make it even creamier, add a tbsp of creme fraiche or soured cream!
Now build you wraps - add your creamy chipotle filling, then top with cheddar and kidney beans then wrap. Lightly toast each wrap (this will ensure they don’t unwrap) before wrapping in tin foil.

  • 500g of chicken breast - diced.
  • Tbsp of fajita seasoning, or to taste.
  • Tbsp of extra virgin olive oil.
  • 1 onion
  • 2 bell peppers - one green, one red.
  • Tbsp of chipotle paste.
  • 4 tbsp of light cream cheese.
  • Tbsp of creme fraiche or soured cream (optional).
  • 50g of kidney beans.
  • 50 of cheddar - grated.
  • 4 tortilla wraps.
