Add diced chicken breast to a large bowl and coat in tbsp of fajita seasoning. Heat olive oil in a large frying pan, then add chicken breast. Cook until chicken is showing colour all over, then add onion and peppers - cook for 5 mins until soft.
Add chipotle paste and light cream cheese to pan and stir to combine, you should be left with a creamy sauce. To make it even creamier, add a tbsp of creme fraiche or soured cream!
Now build you wraps - add your creamy chipotle filling, then top with cheddar and kidney beans then wrap. Lightly toast each wrap (this will ensure they don’t unwrap) before wrapping in tin foil.

- 4 tortilla wraps.
